Flavor Explosion - Shitake Flatbread

Get ready, because I'm gonna show you how to make
a super umami flatbread.
Before we start, let's talk about umami.
It's the fifth taste.
It's something that actually brings a lot of flavor to food,
and kind of makes things a bit more cravable.
We're gonna focus on shiitakes today.
Dry shiitakes actually deliver
some of the highest concentration of umami possible.
What we're gonna do is we're gonna take these dry shiitakes
and we're gonna grind them up
so that they're easily incorporated with the flour
to make the flatbread.
So here we have that quarter cup of powdered dry shiitakes.
We also have a tablespoon of kosher salt.
A teaspoon and a half of active dry yeast.
Water, a cup and a quarter.
We're gonna just knead this guy for about five minutes.
I don't know about you guys,
but I'm starting to get hungry.
So let's get a ready stove, and get these guys cooking.
We're gonna let it cook for about two minutes per side.
I think we're looking pretty good here.
I think it's ready to come off.
So now we've got this great flatbread,
and we have a lot of options about what you can do with it.
It's practically like a blank canvas.
I love roasted vegetables,
so that's what I'm gonna be using.
